Pens Rigate Bronze Draw
2,70 €
The Rigate Penne are presented with the characteristic matte golden wheat, typical of a bronze drawn pasta. The short and tubular format is well defined, with the ends cut diagonally and the rows running through the entire outer surface. To the touch the pasta is rough and slightly irregular, characteristic of the processing with bronze drawing. In cooking it maintains the shape well, swelling evenly without losing structure. In the plate it retains the seasoning both inside and on the surface, being particularly suitable for rich and full-bodied sauces.

Round Pens Rough Drawn – Double Lines, Double Socket on The Dressing
The format that leaves no escape to the sauce
The Rigate Pens Rough Draw of the Pastificio Artigiano Cav. Giuseppe Cocco is a concentrate of artisanal ingenuity. Two elements work together to trap the dressing: the outer lines, which flow along the entire length of the pen, and the rough and porous surface created by the circular and single-hole bronze die. The result is a paste that collects the gravy inside, outside and everywhere — with every bite.
The bronze drawing, the heart of the method
In The Pastificio Artigiano Cav. Coconut nothing is left to chance. The bronze drawing is not just an instrument: it is a philosophy. It imprints on the pasta a natural and authentic roughness, that the industrial pasta drawn in teflon can never replicate. Each pen is born irregular, alive, with a surface that embraces any seasoning with an extraordinary grip.
Semolina, water and mastery
Durum wheat semolina, grown between Arizona and Italy and milled entirely in Italy, guarantees 13g of protein per 100g and a robust structure that perfectly holds the 11 minutes of cooking. A pen that holds, that does not cook, that maintains its character even in baked formats or in cold pastries.
Versatile by nature
Striped pens are the most versatile format of Italian cuisine. They hold important meat sauces, are exalted with vegetables and legumes, are perfect in the oven with béchamel and meat sauce, and surprise in the summer cold pasta salads. With the Cocco rough drawing, each recipe level salt.
